#44 Vegan Caramelized Onion Mac and Cheese

Well the photo that came with the recipe looks significantly better than my finished product did.  This mac and cheese was really good but I think the recipe is lacking when it says only cook one and a half onions.  I think you could easily do two or even three if you really like caramelized onions - which I do. The base of the sauce is eggplant which is a really sneaky way to get more veggies into a creamy pasta sauce.  The taste is similar to vegan macs made with a cashew base.  Very creamy and good but the breadcrumbs are just sprinkled on top because this would dry out too much if it was baked in the oven.  Recipe here.
