#44 Vegan Caramelized Onion Mac and Cheese

Well the photo that came with the recipe looks significantly better than my finished product did.  This mac and cheese was really good but I think the recipe is lacking when it says only cook one and a half onions.  I think you could easily do two or even three if you really like caramelized onions - which I do. The base of the sauce is eggplant which is a really sneaky way to get more veggies into a creamy pasta sauce.  The taste is similar to vegan macs made with a cashew base.  Very creamy and good but the breadcrumbs are just sprinkled on top because this would dry out too much if it was baked in the oven.  Recipe here.

#43 Sweet Potato Mac 'n' Cheese

Another vegan recipe and another from Chef Chloe.  I am really into her books right now since her new one Chloe's Vegan Italian came out and I've just been so inspired to try all of her recipes old and new!  This one is only found on her website.  It was similar to the last recipe except it's not baked and has the addition of sweet potato which is healthy (so I didn't feel guilty not having a side veg) and very tasty.  The recipe can be found here.

#42 Best-Ever Baked Macaroni and Cheese

This recipe is from Chloe's Kitchen.  It's vegan and it's really good.  One of the best things about eating vegan is that there is no food coma afterwards.  I made another of Chef Chloe's vegan macs a few years ago.  It was #20 on my list and you can view it here.  Getting off of dairy is hard (especially for a cheese fiend like myself) but I'm giving it a go so expect more vegan macs to come.

#41 Mac & Cheese

This was a basic recipe.  I couldn't find the cheese Miss Moss suggested so I subbed really cheap Cracker Barrel Swiss cheese for the Gruyère and hard Romano for the Taleggio.  The combination turned out excellent and we were all very pleased with the result.  Recipe here.

#40 Camusclim (Pasta and Shrimp Casserole)

While this recipe wasn't touted as macaroni and cheese that is essentially what it was as the elements were all there. I am going to call this my Brazilian Macaroni and Cheese because ever since the World Cup in Brazil this year I am loving all things Brazil especially the National Team.

Okay, so back to the pasta.  One difference is that the cheese wasn't melted in the béchamel but layered.  This left the pasta creamy but with layers of gooey, melted cheese which I loved.  I had to make a few substitutions because I couldn't find all of the ingredients.  I left out Brazilian pickled chiles and annatto seed and subbed an Anaheim pepper for the Italian frying pepper.  I used regular instead of Thai basil.  It still turned out great but one day I'd like to try this exactly as listed.

#39 Momma's Baked Macaroni & Cheese

This one was so simple I truly thought it would taste horrible. I bought the ingredients before reading the recipe through and thought the stewed tomatoes were to be mixed in and not served as a side.  I did splurge and bought some very good sharp white cheddar which may very well have been the saving grace to this dish.  It was surprisingly very, very good and so easy I would definitely make it again.  Just plan for a long baking time.  Recipe here courtesy of The Two Bite Club.

#38 Slow-Baked Mac and Cheese

This was found on the bottom of my "recipes to try" pinboard on Pinterest.  I think I've made this before or something very similar.  I jazzed it up a bit with several liberal dashes of Hungarian Paprika.  The Italian Blend shredded cheese is just too bland for mac and cheese and I hope I remember to never use it again. I think a decent mac needs sharp cheddar, smoked Gouda or Gruyère somewhere in the mix.  You can find the recipe I used here.

#37 Avocado Mac and Cheese

This sounded interesting.  The avocado made it too fruity tasting for me.  I think perhaps more cheese is needed.  Definitely edible but not something I would try again.

#36 Stovetop Butternut Mac and Cheese

Here is another pinterest gem.  A stovetop mac is always nice because there are fewer dishes to deal with and it usually comes together quick and easy.  Since this was a weeknight meal I was really hoping to find some frozen squash but unfortunately the market was out. Peeling and dicing the squash was really no problem though.  I really love this recipe. What a great way to get some veggies into the meal (along with a side of broccoli of course). Super tasty and easy.  The pot was no fun for my son to wash though!

One note, instead of the called for chicken broth I made boullion with my favourite vegetarian Better than Boullion No Chicken Base.
